Please help me on my way!

Ok so after playing Daggerfall many years ago (and ruining my social life and school work) I finally bought Oblivion at the weekend. So far im really impressed and it looks amazing.

I have a few questions before I get properly into the game, im already out the sewers and have had a little explore.

Now on Daggerfall I never really understood the magic/spell side of things so on Oblivion I have chosen Redguard race and have geared my skills and class up towards the combat warrior side of things. Now im thinking maybe this isnt a good idea and I should have made my character more of an all rounder with skills in magic etc, am I going to screw myself later on in the game by my character being really just a warrior/knight? Also would a character geared up in magic always be better then my character, even if i levelled up my character to master in the magic field?

Few more questions (sorry!)

- When you explore a cave/dungeon etc, and you kill the enemies inside and then go back to the same cave later on, will the enemies be respawned or will the location be rid of the enemies for good?

- I was given a quest to find some wine for some lady in a pub, do i need to remember or make a note of the location, so when i have found the wine I know where the hell i bring it back to? lol

- Can you change your race or mastery/skills later on in the game or once your out the sewers thats it?

Sorry for the essay but just wanted some advice before i get too far into the game

caves/dungeons get restocked with enemies/loot after 3 weeks.

you'll get a reminder and a marker on your map when you find the wine.
