If the AI is supposedly different on the two consoles - that effects the gameplay. Meaning they are not identical 'gameplay-wise'
The aesthetic appearance of the game comes down to personal preference. I wouldn't be surprised if the differences fell more on design than necessity [due to power/processing limitation].

I never said the GPU had anything to do with AI. I said the 360's RAM allows for better AI as RAM is for AI and textures.
Yes this could mean there is a difference gameplay-wise but I'm assuming that in the interest of fairness Ubisoft made the 360's AI the same as the Ps3's AI and used the remainder of the RAM on texturing.That would explain why the 360 version looks better.
