Yes they can update the beta all the wait but it won't matter.
The beta is a different build of the game. Any updates applied there can't just simply be carried over to the retail game because it's different code. The updates have to be rebuilt for the retail game.
And if you read my whole post you'd see it said " how many fixes can they make to a game
before release after the game has already gone gold? None."
I said before release. Obviously they can release a patch after release.
